Thunderstorms made us decide to postpone laundry until tomorrow. I took advantage of the extra time to cook up a storm by making corned beef in the slow cooker. After 4 hours it seemed to be tough. I plopped it into the pressure cooker for 1/2 an hour and the texture was easy to cut with a table knife. Though it was a tab bit salty, it went well with steamed cabbage, broccoli, and oven roasted potatoes. Yum, yum! I'm getting back into my cooking routine again.
I hope I don't gain weight!
